Why this market is the deepest

Supply follows players. The ruleset with the most characters also has the most people farming, so more gold reaches the market and sellers compete harder for each buyer. That pressure usually keeps Normal near the cheap end; the table above shows where it stands today.

What Normal gold is spent on

Riding first: 100 gold for the first tier of training and 1,000 for the top one, with the first mount included. Then bags, profession training and, from 9 December, consumables for Barrow Deeps, Hyjal Summit and Onyxia's Lair.

Questions about PvE gold

Is PvE gold the same as PvP gold?

It is the same currency in separate worlds. Rulesets do not mix in Forever, so gold on Normal cannot be moved to PvP or Roleplay, and each ruleset keeps its own price. Buy for the ruleset your character is on.

Do Alliance and Horde pay the same?

Not always. The seller lists each faction as a separate offer, and the prices can differ; switch the faction above to see yours. The difference comes from supply on each side.

Can I move my Normal character to another ruleset later?

No. Blizzard has said characters cannot hop between rulesets; playing elsewhere means a new character there. Account-wide progress, such as collections, does carry over.
